HEALTHY ZUCCHINI SLICE WITH HERBS & TOMATO

Some of you may have seen it on my Instagram last week so here is this super simple yet delicious slice. With both zucchini and tomato in season at the moment you could whip this up as a budget meal in no time, and even better - source the ingredients organic from your local farmers market.

When is zucchini in season? 

In Australia, zucchini peaks in summer and autumn months. Take advantage of zucchinis when they are at their best during this time to whip up my zucchini slice. Zucchini’s are also very easy to grow yourself and this means you can use the beautiful zucchini flower also which you don’t find when purchasing it.

Other ways to use zucchini: 

I love zucchini because I think it is a relatively non-offensive vegetable and due to it’s high water content it lends well to be added to;

  • Smoothies (try my Choc-ini Smoothie)

  • Fritters (surely you’ve tried my Haloumi & Corn Fritters using zucchini?)

  • Bolognese sauce or even as zoodles (see Veggie Packed Bolognese)

    How to make zucchini slice

    Serves 4-6 with side salad

    Ingredients

    2 x zucchini grated

    1 cup mixed herbs, chopped (I used parsley, basil, coriander, mint, rosemary)

    ½ red onion, finely diced

    6 eggs, whisked

    ¾ cup buckwheat flour

    1 tsp baking powder

    ½ cup extra virgin olive oil

    pinch of salt and pepper

    1 tomato, sliced

    1/3 cup fetta/any cheese

    Directions

    Preheat the oven to 190⁰C. In a bowl combine the zucchini, herbs, onion, eggs, flour, baking powder, oil and salt and pepper. Pour into a baking dish and then layer the tomatoes over the top before sprinkling on the fetta/cheese. Bake for 30-35 min or until cooked through.

    What to serve with a zucchini slice? 

    To make this into a more filling meal, I like to serve zucchini slice with a tasty side salad. Have a browse of my salad recipe collection for some inspiration or try my favourite which is jump a simple big handful of rocket drizzled with extra virgin olive oil and lemon juice (walnuts, pear and parmesan also welcome ;)).

    How long does zucchini slice last? 

    You can store zucchini slice in an airtight container and keep it in the fridge for 5 days. 

    How to freeze zucchini slice? 

    If you’re not going to finish your zucchini slice or want to make ahead to enjoy in the coming weeks, then it’s a great idea to freeze it. cut it into slices, spread on a tray and freeze, then add them to a container. It will keep for up to three months and can be warmed up in the oven when you’re ready to eat.
