Jalapeno Chicken Burgers

Recently I had the pleasure of working with one of my favourite brands - Cobram Estate. Their Extra Virgin Olive Oil is some of the best in the world and they have just released a new Meal Starter range for which I have created this recipe! Serves 4

Ingredients

500g chicken mince
1 jalapeno chilli, finely chopped
1 handful coriander, finely chopped
1 onion, diced
1 clove garlic, crushed
1 egg
½ cup breadcrumbs
1 tablespoon Chilli & Coriander Extra Virgin Olive Oil

Avocado sauce:

1 avocado
1 tablespoon Chilli & Coriander Extra Virgin Olive Oil
1 lime, juice and zest

Serve with bread rolls and your choice of salad

Directions

Combine the mince, chilli, coriander, onion, garlic, egg and bread crumbs with a pinch of salt and pepper. Shape into patties.

Heat a large fry pan on medium – high heat and add 1/2 tablespoon of the Chilli & Coriander Extra Virgin Olive Oil. Grill half of the patties 4-5 minutes each side or until browned and cooked through (repeat with another ½ tablespoon oil and remaining patties).

Meanwhile place the avocado, olive oil, and lime juice and zest in a food processor and blitz until smooth (or you can mash with a fork – it should be thick enough to spread).

Serve the burgers with bread rolls, salad and the avocado sauce.
