breakfast cauliflower chia seeds cinnamon hazelnuts oats porridge recipes rice milk walnuts yoghurt Jun 21, 2017

Okay, here's my new favourite breakfast! It was created from having left over cauliflower rice from one of the recipes in my 12 Day Cleanse Program.  I wanted to use it up and it was a cold morning so I thought why not give it a go in porridge - and it was so yum! I still add some oats for their fantastic fibre content but using mostly cauliflower leaves you feeling less full and heavy afterwards. Play around with the toppings as you wish but cauliflower and hazelnuts are a seriously delicious combo!

If your not sure what I'm on about when I say cauliflower rice, it's simply cauliflower broken into large chunks, pulsed in a food processor until it resembles the size of rice, and lightly steamed (or raw if you prefer).

Serves 1

1/3 cup cauliflower rice
2 tablespoons oats
1 tablespoon chia seeds
1/2 teaspoon cinnamon
1/2 teaspoon manuka/raw honey
1/2 cup rice milk (or milk of choice)

Toppings: greek yoghurt, walnuts and toasted hazelnut butter

Place the cauliflower, oats, chia seeds, cinnamon, honey and milk into a small saucepan. Heat on low heat and stir regularly until thickened. Transfer to a bowl and add your toppings.
