dessert gluten free macadamia muffins pear recipes snacks May 07, 2019

I tested these muffins a few times and I think you’ll be very happy with the end result! The combination of pear and macadamia is so yum but you could also substitute for apple and walnuts or any other pear/apple and nut or seed combo if you wish. They are gluten free and a great source of fibre and protein so perfect for a mid morning or afternoon snack!

Makes 12


1/2 cup brown rice flour

½ cup buckwheat flour

1 cup almond meal

2 teaspoons baking powder

4 eggs

¼ cup macadamia oil

½ cup greek yoghurt

1/3 cup honey

2 pears, diced

½ cup macadamias, roughly chopped


Preheat the oven to 180 and line a muffin tray with cases or oil. Combine the flours, almond meal, and baking powder in a bowl. In a separate bowl combine the eggs, oil and honey. Add the wet ingredients to the dry ingredients and then add the pear and nuts and stir through. Spoon mixture evenly between muffin holes and bake for 20-25 minutes or until just browned on top.
