You wouldn't think it's possible..gluten free, sugar free, dairy free, moist, delicious muffins! Well here they are. With my 21 Day Detox starting next Monday I need to tick all of those boxes so I've kept them gluten free by using a combo of coconut and almond meal (with baking powder to help rise), and I have only used 2 mashed bananas as the sweetener. The sweet potato keeps them nice and moist and also adds a touch of sweetness and I added some protein powder which comes along with the gift box included in the detox program.

If you're a 90% dark chocolate fan, you will be in love, if you're not, throw in some blue or blackberries to cut through the bitterness of the cacao. If you're not detoxing, 1 tablespoon of maple syrup/raw honey could also be added.

Makes 12

Ingredients

1 cup desiccated coconut
1 cup almond meal
2 teaspoons baking powder
pinch of salt
½ cup cacao powder
¼ cup natural protein powder
1 teaspoon cinnamon
4 eggs
1/4 cup coconut oil, melted (or extra virgin olive oil)
2 ripe bananas, mashed
1 cup steamed sweet potato, mashed

Directions

Preheat the oven to 180⁰C and line a muffin tin with baking paper or muffin cases.

Combine the coconut, almond meal, baking powder, salt, cacao powder, protein powder and cinnamon in a large bowl. Beat the eggs and then add to the mixture with the coconut oil mashed banana and sweet potato, combining well.

Divide between muffin holes and bake for 25-30 minutes or until a skewer inserted comes out clean.
