There's no doubt about it, we could all do with a few light and fresh recipes at this time of the year, whether it's because of the hot weather or due to a few too many indulgences over the Christmas break. For me, it's both :)
Okay now this one seriously is one of my favourites, if not my number one! I created this for a group program a while back and I think this clients feedback really sums it up: "I just had my first Macadamia Salmon orgasm...BEST DISH EVER!"
Although not easy on the hip pocket, fish should be a regular addition to everyone's meals and this recipe is great as a small amount of fish goes a long way. Although not as good as oily fish, white fish still provide some healthy fats and are a great source of lean protein.
