Honey Dijon Salmon
Salmon is definitely one of my favourite foods and I have been known to eat it for breakfast, lunch and dinner (I have already had it three times this week and its only Wednesday!).

Eating nutritious food becomes a struggle too because no longer do I feel like smoothies and salads even though I know my body thrives of fresh and light food.

Mexican is by far one of my favourite cuisines and this Mexican Bowl is why I love it so much. Mexican food is just so full of flavour and still amazingly fresh meaning you can enjoy a light meal without missing out on your favourite dishes.

There's no doubt about it, we could all do with a few light and fresh recipes at this time of the year, whether it's because of the hot weather or due to a few too many indulgences over the Christmas break. For me, it's both :)
