It doesn't get more hearty than this in Winter. Mung beans are super nutritious plant food that is a fantastic source of plant protein not to mention fibre, antioxidants, folate, manganese and magnesium.
Tempeh is a hard one to get people over the line with...until you serve them this! It is probably my favourite way to cook tempeh because it's easy, fresh, damn tasty, and is a meal that is best shared around a table with others.
Fish is such an undervalued food by most people and a lot of clients I see do not include enough of it in their diets. I know it can be expensive and a lot of people are not keen on the 'fishy' smell or texture but I find this curry always tend to win people over.
