If you haven't tried pulse pasta yet it's a great option to mix into your pasta routine - high in fibre (ie. fuel for our gut microbes) and also protein so it's a perfect way to include more plant based meals in your week.
I know, I know, a frittata sounds so simple and boring! But take my word for it, you will be wanting to eat this for breakfast, lunch and dinner...and if your like me, you will :) It's super fresh, amazingly tasty and when paired with a simple green salad you will wonder why you don't have frittatas more often!
Winter is a struggle for me and I'm sure I'm not the only one. The miserable weather, the dark mornings and nights, the lack of sunshine - and the list goes on.
