Who doesn’t love tacos!?

Here you will get the ultimate mouthful of creamy slaw, crispy chicken and soft tacos with a tangy coriander and kefir sauce to top it off. I love using kefir in savoury cooking and I’m always getting asked for different ways to use it so consider this a very tasty way to do so (not to mention the gut health benefits of the probiotics too)!


Serves 4


4 x chicken thighs (or breasts), flattened to even thickness 
1/3 cup plain flour 
1 egg, whisked 
1 cup breadcrumbs 
¼ red cabbage, finely shredded 
¼ green cabbage, finely shredded 
1 x carrot, grated   
2 x spring onion, finely sliced 
½ x avocado 
1 handful coriander (stalk and leaves) 
1 cup kefir yoghurt 
1 x lime (juice and zest) 
½ green chilli (optional) 
8 x tortillas  
Extra lime and coriander to serve 


Place the flour, egg and breadcrumbs in three separate bowls and add a pinch of salt and pepper to the breadcrumbs. Crumb the chicken by coating each piece in the flour, dipping it in the egg and then crumbing it in the breadcrumb mix.  

Heat a fry pan to medium heat, add a good splash of extra virgin olive oil and fry the chicken until browned and crisp on each side and cooked through in the centre.  

Meanwhile, combine the cabbage, carrot and spring onion and set aside. Add the avocado, coriander, kefir yoghurt, lime juice and zest and chilli if using into a blender or food processor and blitz until smooth. Add 2/3 of the dressing to the salad and mix through and keep the remaining sauce to drizzle over the top of the tacos.   

Prepare the tortillas according to packet instructions. When the chicken is ready, slice it into thin strips. Serve tortillas with sliced chicken, creamy slaw, kefir sauce and extra coriander and lime.
