KIM CHI TACOS

Four of my favourite things combined...tacos, salmon, avocado and kim chi! This recipe is so simple but unbelievably tasty and it would be a great one to do when entertaining. If you haven't tried Kim Chi before, get ready for your mind to be blown! It is a spicey fermented veggie combination that will do wonders for your gut health but takes any meal it is included in to the next level - well I think so anyway :P    

Serves 4

Ingredients

8 corn tortillas
1 cos lettuce, thickly shredded
1 lebanese cucumber
1 mango, sliced
1 avocado, sliced
2 salmon fillets
4 tablespoon chipotle mayonnaise - see note below (or any mayonnaise)
4 tablespoons kim chi
4 tablespoons coriander
1 lime, cut into 4 wedges 

Directions

Heat a fry pan to medium-high heat and cook salmon for 5-7 minutes on each side or until cooked through. Remove from pan and shred with a fork into chunks. 

Heat the tortillas according to packet instructions and then build tacos with lettuce, cucumber, mango,avocado, kim chi, mayonnaise and coriander. Squeeze over some fresh lime juice. 

I used a vegan Chipotle Mayonnaise by a brand called Naked Byron Foods that used aquafaba (chickpea liquid) and is also soy-free, gluten-free, has no artificial colours, flavours or preservatives AND is Australian made & owned. Ticks all around, in moderation of course! *This is not a paid ad/collaboration - I just love the product :)
