The Acai berry is extremely high in anti-oxidants and fibre and unlike other fruits is very low in sugar. More research needs to be done but current studies are showing potential benefits for weight loss, lowering cholesterol and improving arthritis. Chia seeds are a fantastic source of healthy fats and are very helpful in keeping the bowels regular. Layer with some full fat yoghurt for extra protein and live cultures and this a nutrient packed breakfast or even dessert!
1/4 cup chia seeds
1 cup almond milk
2 teaspoons acai berry powder
½ teaspoon maple syrup
To layer yoghurt (coconut yoghurt for dairy free) and fresh berries
Blend the almond milk, strawberries, acai powder and maple syrup until combined and smooth. Pour the milk into a bowl and whisk in the chia seeds. Whisk again at 5 minute intervals for 10 minutes and then leave to set in the fridge over night or for at least 20minutes. Layer 2 glasses with chia mixture, yoghurt, berries and repeat.
