Turmeric & Tahini Tofu Stirfry
I know Tofu may not appeal to everyone but I highly recommend you give this a go because most of the time people who don't like it just don't know how to cook with it.
Chicken Fajitas with Jalapeno Salsa
Quick, easy, tasty, kid friendly - what more could you want? This is a regular go to meal for my house hold because I've never heard of anyone not liking it and there's minimal ingredients if you still need to drop by and do the shopping your way home.
Thai Beef Salad
This one's a classic and I know it doesn't sound overly exciting - I always overlook it when I see it on a menu - but trust me, this recipe is seriously yum and will never disappoint!
Chickpea & Sweet Potato Burgers
These burgers are a great vegetarian option whilst still keeping the protein high with chickpea's and quinoa.
Ginger Steamed Fish
There's no doubt about it, we could all do with a few light and fresh recipes at this time of the year, whether it's because of the hot weather or due to a few too many indulgences over the Christmas break. For me, it's both :)
Fish Tacos with Avo Slaw and Jalapeno Mayo
This dish includes three of my favourite foodie things...mexican flavours, avocado and fish! I like finding ways to create tasty fish meals because I know it something people often struggle with so they end up not having very often and are missing out on so much goodness!
Red Lentil & Spinach Dhal
Dhal is such a hearty, warming and nourishing meal and is something I always crave during the winter. I thought I would share it with you all because even though we're nearly past winter, the temperature certainly doesn't suggest so!
Broccoli, Kale and Coconut Soup
Soups are just so warming and nourishing in winter and this one is packed full of flavour! Broccoli and Kale are both vegetables with a highly superior nutritional value and I try to include these in my diet as much as possible. Broccoli is high in vitamin C, vitamin A and calcium plus has a cleansing effect on the liver.
Soft Fish Tacos
Although not easy on the hip pocket, fish should be a regular addition to everyone's meals and this recipe is great as a small amount of fish goes a long way. Although not as good as oily fish, white fish still provide some healthy fats and are a great source of lean protein.
