Beetroot & Silverbeet Tart With Spelt Crust
Although this dish sounds a bit fancy it was literally a throw together of the seasonal produce I received in my organic box combined with some pantry/fridge staples I always have on hand such as eggs, spelt flour, extra virgin olive oil and kefir.

I know, I know, a frittata sounds so simple and boring! But take my word for it, you will be wanting to eat this for breakfast, lunch and dinner...and if your like me, you will :) It's super fresh, amazingly tasty and when paired with a simple green salad you will wonder why you don't have frittatas more often!

Making up a big batch of salad on the weekend is such a good idea because lunch for the next 2 -3 days is sorted! I am always trying to come up with different salad combo's because I feel like salad is something people get sick of quite quickly.

This recipe is what I love about my job. When people think to eat healthy, they think salad. That's a good start but it's always the old lettuce, tomato, cucumber, tomato combination.... SOOO boring!
