Coconut Baked Fish with Crunchy Kale Salad
With this meal here I think the salad is just as, or even more delicious than the fish and it is my version of Changs Noodle Salad (everyone knows someone that always bring the Changs Noodle Salad to the BBQ right?)
Fish Curry
Fish is such an undervalued food by most people and a lot of clients I see do not include enough of it in their diets. I know it can be expensive and a lot of people are not keen on the 'fishy' smell or texture but I find this curry always tend to win people over.
Red Lentil & Spinach Dhal
Dhal is such a hearty, warming and nourishing meal and is something I always crave during the winter. I thought I would share it with you all because even though we're nearly past winter, the temperature certainly doesn't suggest so!
Green Tea, Salmon and Miso Soup
This is my idea of heaven. Especially seeing Melbourne has decided to turn up the winter dial all of a sudden! Salmon is a fantastic source of omega-3 fatty acids and if you find little bones in yours, don't stress, they provide you with calcium so I suggest you gobble them up. Sea weed is so underrated in my eyes and gives you plenty of Vitamin A, C, calcium and antioxidants as well as providing a great source of iodine. Edamame beans are high in protein and fibre and we have bok choy, mushrooms and soba noodles to boost the fibre content even further. Warming, nourishing and super delicious!
Baked Nacho Pots
These Baked Nacho Pots have been an absolute winner with so many of my clients kids and I know there's nothing better than finding a meal that is healthy and will happily feed the whole family.
Garlic Prawns with Charred Broccoli and Soba
Super easy but so delicious this recipe covers all the bases for a well balanced meal. Protein from the prawns, long lasting carbohydrates from the noodles (use buckwheat for gluten free), 3 different kinds of green vegetables, butter for healthy fats (buy a good organic kind or make your own), and some kim chi for fermented gut healing goodness.
Roast Cauliflower, Fennel and Garlic Soup
I just can't get enough of soups at the moment! This one is thick and creamy and the smell of the roast garlic whilst in the oven just fills your whole house with most amazing aroma.
Caramalised Onion, Beetroot and Ricotta Pizza
Everyone loves pizza and the best ones are definitely home made! I've even converted some meat loving males to this pizza because it's just so damn delicious. And for all of my gluten free friends out there, rejoice; a pizza base that actually goes crunchy! The key to keeping pizzas a regular meal in your diet is to balance the meal by having half a pizza with extra salad on the side.
Chicken and Mushroom Pie
Comfort food is a must in Winter and as far as I'm concerned no salad is really hearty enough to take the place of a warming and nourishing pie. What I love most about this pie is the satisfaction after a long, cold day at work, when you bring the pie fresh out of the oven and can be confident it is just a delicious as it is healthy for you.
