Coconut, Almond & Buckini Chocolate

Cacao really is amazing! Super high in anti-oxidants, a great source of magnesium and also a source of tryptophan which is needed to produce our happy hormone serotonin. I've combined it here to make a chocolate and it's seriously easy so everyone really should try making their own chocolate.  I think there's three levels of chocolate .1 Your commercial milk chocolate, 2. your commercial dark chocolate, and 3. your homemade all natural chocolate. The difference being the additives and sugar and get less and the bitterness and benefits get better from 1-3. I do love my chocolate but because it's not sweet like your commercial varieties 1 or 2 pieces is always enough. 

You can swap any ingredients you like to go in the chocolate from goji berries, cranberries, dried blueberries to cashews, chilli, sea salt, mint oil or even just enjoy it plain.

Makes approx 20 pieces depending on your mould


2/3 cup cacao butter (I like to use buttons)
1 cup cacao powder
1/4 cup maple syrup
2 tablespoons coconut oil
1/4 cup each of activated buckinis, toasted almond flakes and toasted coconut


 Heat the cacao butter and coconut oil in a saucepan on low until melted. Remove from the heat and whisk in the maple syrup and then the cacao powder. Stir through your buckinis, almonds and coconut. 

Pour into a tray lined with baking paper or into chocolate moulds. Allow to set in the fridge and store it in the fridge for as long as it lasts - good luck!
