This is a great recipe for those who are strapped for time in the mornings as you simply whip it up the night before and breakfast is ready to go in the morning. I use a combination of oats and buckwheat here to get more variety in but you can mix it up however you like and even use any kind of nuts or seeds in place of the macadamias. Berries are getting on the expensive side of things now the seasons have changed so even chopped pear and apple would work well. It's a filling breakfast full of fibre and good fats that will sustain you all morning.
2 tablespoons oats
1 tablespoon desiccated coconut
2 tablespoons buckwheat
1 tablespoon macadamia nuts
½ cup coconut milk
2 tablespoons coconut yoghurt
Combine the oats, coconut, buckwheat and macadamias in a small jar. Pour over the milk and leave to soak overnight in the fridge. In the morning top with the coconut yoghurt and fresh berries or your choice of fruit.
