Due to my work as a recipe developer I am always trying new recipes and actually barely repeat ones I already have - but this meal is definitely one that is a regular in my diet.

It’s not often that I share a sweet recipe on my blog and to be honest it probably a reflection of how much I eat sweet things which isn’t very often so there’s not a lot of photo opportunity!

I find cos lettuce a very boring food but because it is so easy to grow I often find myself with an abundance of it.

I know Tofu may not appeal to everyone but I highly recommend you give this a go because most of the time people who don't like it just don't know how to cook with it.
