This recipe came about because I had a heap of apples in the fruit bowl and some sour cream in the fridge and one of my pet hates is wasting food!

Everyone should have a go to bircher recipe in their life, and this is mine!

Red meat is a once to twice a week occurrence in our house hold and when we do have it I will often go for lamb as love the flavour.

I have had the idea for these muffins in my head for about 2 years and finally I have brought it to life....and they do not disappoint if I do say so myself!
