Everyone should have a go to bircher recipe in their life, and this is mine! Not only is it super nutritious being full of fibre from the oats and apple but you also get plenty of healthy fats from the walnuts, almonds, pumpkin seeds and coconut, plus cinnamon is fantastic for balancing blood sugar levels so it's a great option to sustain you throughout the morning. The reason I love it the most however is because you can make a big batch and keep it in the fridge. It will last you a few days worth of grab and go breakfasts.  

Serves 1

Ingredients

¼ cup oats
1/2 apple, grated
1 tablespoon almonds, roughly chopped
1 tablespoon walnuts, roughly chopped
1/2 tablespoon pumpkin seeds
½ teaspoon cinnamon
½ cup coconut milk (Pureharvest Cocoquench is my fav)

Directions

Combine the oats, apple, almonds, walnuts, pumpkin seeds and cinnamon in a jar. Pour over the milk and leave in the fridge overnight. Top with extra fruit (blueberries are my fav), yoghurt/kefir and coconut to serve.
