I'm not one to eat sweet things for breakfasts very often but while I was testing a heap of recipes for a cafe I was writing the menu for recently, I discovered THE BEST pancake recipe.

I have had the idea for these muffins in my head for about 2 years and finally I have brought it to life....and they do not disappoint if I do say so myself!
