Vanilla Spelt Pancakes with Quark & Figs

I'm not one to eat sweet things for breakfasts very often but while I was testing a heap of recipes for a cafe I was writing the menu for recently, I discovered THE BEST pancake recipe. I knew I had to share it for those pancake lovers out there and even if you're not - earn some brownie points and cook them for someone that is. Ideally on a rainy Sunday morning so they can enjoy them in bed :)

Makes 12 (3 per serve)

Ingredients

3/4 cup spelt flour
¾ cup wholemeal spelt flour
3 ½ teaspoon baking powder
1 teaspoon salt
¼ cup raw sugar
1 1/2 cups milk (I used rice milk)
2 eggs
3 tablespoons butter, melted
2 teaspoons vanilla essence

To serve: 1/3 cup quark, figs, strawberries, toasted almonds and a drizzle of maple syrup.

Directions

Sift together the flour, baking powder and salt. Make a well in the centre of the dry ingredients and pour in the maple syrup, milk, egg and melted butter. Combine well.

Preheat a non-stick fry pan to medium to high heat. Turn to low and add a small knob of butter, then pour ¼ cup of batter at a time into the pan. Cook for 2-3 minutes each side or until browned. Remove and keep warm before repeating with remaining batter. Serve with suggested or desired toppings.
