Mexican Bowl
Mexican is by far one of my favourite cuisines and this Mexican Bowl is why I love it so much. Mexican food is just so full of flavour and still amazingly fresh meaning you can enjoy a light meal without missing out on your favourite dishes.
Hazelnut & Vanilla Cookies
This recipe was a bit of a throw together and pray as I needed to make some cookies for a Christmas event but due to a recent food intolerance test I did, I should not be eating almonds and eggs, both of which were in the original recipe!
Chickpea & Sweet Potato Burgers
These burgers are a great vegetarian option whilst still keeping the protein high with chickpea's and quinoa.
Buckwheat, Beetroot & Lentil Salad
This recipe is what I love about my job. When people think to eat healthy, they think salad. That's a good start but it's always the old lettuce, tomato, cucumber, tomato combination.... SOOO boring!
Ginger Steamed Fish
There's no doubt about it, we could all do with a few light and fresh recipes at this time of the year, whether it's because of the hot weather or due to a few too many indulgences over the Christmas break. For me, it's both :)
Chilli & Lemongrass Rice Paper Rolls
Tempeh is a hard one to get people over the line with...until you serve them this! It is probably my favourite way to cook tempeh because it's easy, fresh, damn tasty, and is a meal that is best shared around a table with others.
Stuffed Mushrooms with Pesto
This recipe was one I created as a way to get more beans into my diet. I love cooking with black beans and kidney beans but do not use white beans very often.
Creamy Pumpkin, Ricotta & Tuna Pasta
The number one mistake I think people make when they decide to start eating healthy is telling themselves they can't eat high carbohydrate foods like pasta, bread, rice etc.
Fish Tacos with Avo Slaw and Jalapeno Mayo
This dish includes three of my favourite foodie things...mexican flavours, avocado and fish! I like finding ways to create tasty fish meals because I know it something people often struggle with so they end up not having very often and are missing out on so much goodness!
