KALE CHIPS

They've been all the rage the old kale chips but I will honestly tell you that I genuinely enjoy them, not just because I feel like I'm being healthy! If you get the oven temperature, the flavours and the resting time right they can be seriously delicious. Kale is one of the nutritionally superior vegetables available so if you can find tasty ways to get it into your diet then the more the merrier. In case you have heard that you shouldn't eat kale raw because of the oxalic acid., don't stress a bit of raw kale here and there is not going to hurt you, but if you are concerned then a light steam will be enough break down those effects. 

Ingredients

5 stalks kale, leaves torn into chip sizes
1 teaspoon extra virgin olive oil
salt and pepper
Optional: paprika, harissa, parmesan cheese, nutritional yeast, chilli, rosemary, thyme

Directions

Preheat the oven to 180⁰C.  Line a baking tray with baking paper, add the kale leaves and massage the oil into the leaves until all leaves are lightly coated and then spread out on the tray. Sprinkle with salt and pepper and any additional toppings. Bake for 10-15 minutes or until crispy and slightly brown on the outsides. Leave to rest for 2-3 minutes and they will crisp up even more.
